I had it in the "old days" there was a single player named at each division per position, ie 1 QB, 3 WRs, 2 or 3 running backs and now it appears that there may be a dozen or more players named at each position.

Am I correct about the "old days" and if so, when did it change to not just one top dog on the first team but numerous?

There are 7 divisions, roughly 106-108 teams in each division.

Only one first team punter and one first team kicker--why not 5 or 6 at those positions too?

Well, for one, if a player is District POY, they are guaranteed to be 1st team All-State, so in some cases, you may have several at positions like QB who were DPOY, which gives you more at that position.
